2 Grain Cranberry Bread
So satisfying for breakfast.
1/2 c. butter, softened
2/3 c. brown sugar
2 eggs
1 c. rolled oats
1 c. all purpose flour
2/3 c. whole wheat flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
1 c. craisins or raisins
1/2 c. chopped nuts (pecans or almonds)
1 1/4 c. apple sauce
Preheat oven to 350.
Beat sugar and butter. Add eggs. In seperate bowl, whisk together all dry ingredients except 2 tbsp. roller oats. Add cranberries and nuts to dry ingredients. Add applesauce to wet ingredients. Stir together. Pour into cake pan. Sprinkle leftover 2 tbsp. oats on top. Bake at 350 for 20 mins or until toothpick comes out dry.
