Pumpkin Chocolate Chip Muffins
A real comfort food. So moist and delicious. I made certain they were served at our wedding brunch.
2 eggs
1 c. brown sugar
3/4 c. oil
1 1/2 c. pumpkin
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 c. chocolate chips
1/2 c. walnuts, optional
Beat eggs; add sugar, oil and pumpkin. Beat well. Sift together and add dry ingredients, chocolate chips and nuts. Bake at 350 for 20 to 25 mins. Yields 16 to 18 muffins. Freezes well.
