Sunday, September 24, 2006 Stuffed Green Peppers

5 medium green peppers
1 1/4 lbs. ground beef
1 c. cooked rice
1/2 c. chopped onions
1 c. diced tomatoes
1 tsp. minced garlic
1 tsp. salt
1 tsp. pepper
1 can tomato soup
1/2 tsp. basil
1/4 c. grated cheddar cheese

Preheat oven to 350.

Cut tops off of peppers and remove seeds. Drop in boiling water for 3 minutes. Drain and rinse in cold water. In a bowl, combine the next 8 ingredients. Spoon into peppers. Place peppers in greased pan. Mix soup and basil. Spoon over the peppers. Sprinkle tops of peppers with cheese.

Cover and bake at 350 for 1 hour.
